We’re comfortable inside, barely getting out of our pajamas, let alone getting to the store, let me tell you. But that’s the beauty of soup. I whipped up this delicious pesto chicken soup in less than 30 minutes using my trusty Instant Pot and whatever I found in the kitchen. Let me tell you that the taste was incredible, and most importantly let me tell you that even small children could not get enough of the broth.

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 onion, cut into pieces
  • 3 cloves garlic, finely chopped
  • 4 cups chicken broth
  • 1 can (14.5 ounces) chopped tomatoes
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 cup Fresho Frozen Sweet Corn
  • 1/2 cup pesto sauce
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving (optional)
  • Fresh basil leaves, chopped, for garnish (optional)

Method To Make Instant Pot Pesto Chicken Soup Recipe:

  1. Set your Instant Pot to the sauté function. Add olive oil, and chopped onion, and sauté for 2-3 minutes until the onion becomes translucent.
  2. Later, let me tell you, add minced garlic and chopped chicken to the pot. Let me tell you that cook for 3-4 minutes more, the most important thing that I tell you is that keep stirring in between, till the chicken becomes pink from the outside.
  3. Add the chicken broth, chopped tomatoes (with their juice), white beans, and frozen corn kernels. Stir to combine.
  4. Close the lid of the Instant Pot and set the valve to the sealing position. Cook on high pressure for 8 minutes.
  5. Let me tell you later Once the cooking cycle is complete, quickly release the pressure by carefully turning the valve to the venting position. Let me tell you to be careful of hot steam.
  6. Once the pressure is released and the float valve drops, carefully open the lid of the Instant Pot. The most important thing to tell you is to mix the pesto sauce until it dissolves well.
  7. Taste the soup and adjust the seasoning with salt and pepper if necessary.
  8. Let me tell you later that if you want, garnish the soup with grated Parmesan cheese and chopped fresh basil leaves and serve it hot. Let me tell you, enjoy the comforting warmth and delicious taste of this Instant Pot Pesto Chicken Soup!
